Madame Moisè works in close collaboration with a small family winery that has been cultivating vineyards and producing wine in this region for more than 100 years.
For generations this family has worked the vineyards around Montefiascone and Lake Bolsena, developing a deep understanding of the soils, the climate and the care required to produce expressive wines.
Throughout the year the vineyards require constant attention — from winter pruning to the long summer months when the grapes slowly ripen under the Italian sun.
Harvest is the most important moment of the year. It brings together experience, patience and respect for the land, ensuring that every bottle reflects the character of this volcanic region.
From the olive trees that have sculpted our slopes for generations, Madame Moisè – velvety olive oil – is born: an extra virgin olive oil with an intense color, smooth on the palate, scented with fresh grass and almonds.

Harvested in mid-September at optimal ripeness, the grapes are carefully hand-selected and gently whole-cluster pressed to ensure purity.
Fermentation begins in temperature-controlled stainless steel to maintain aromatic precision. Approximately 30% of the wine completes fermentation and aging in French oak barriques, adding texture, dimension, and understated elegance.
The result is a wine that is both vibrant and layered — contemporary in style, yet faithful to its heritage.
